Happy Chinese New Year!!

Yippee, even though I wasn't into Chinese New Year last week... this week I am raring to go... so I am busy baking goodies.. and one of them is an old favourite, a classic, the pineapple jam tart.

My pineapple tarts recipe is adapted from http://www.deliciousasianfood.com/2007/05/17/pineapple-tart-pastry/

The jam I had made from scratch, the recipe is also from the same site.

The pie was made from the second batch on Day 2 of baking, as I had wanted to use up all the jam.  I sprinkled cinnamon sugar on top of the pies.

sweetness and tartness of the pineapple would work so well with the pastry, yum!

Thx Noods, just saw your comment...it is super yummy, very buttery, and very sweet jam, made from QLD pineapple. I brought some to work yesterday...gone! and posted some to friends and gave some away ;) Still got some for myself for NY. Happy Tet Day to you ;)XO
