Chilli Queen

Some of you may know me, as the Chilli Queen, this is because of my love for all things chillies. Now, I do not claimed to a chilli plant expert. I don't know all the varieties. I just eat them coz they are so good!!!

After spending the day at Bunnings yesterday taking pics of chillies, today I went back for my pot of chillies. I didn't buy the one with the silly metal ornament, I just wanted a chilli plant and after a restless nite sleep, I said to myself this morning; "...screw it, $20 for a chilli plant... buy it!". For now, she is in the back patio, hope the fukids do not attack it or there'll be trouble!

So which one did I get? Guess?

King Prawns Noodle

So what does one eat when she has been baking all day and is absolutely tired and stuffed? As in very hungry, I could eat a horse but not literally... eww!!! And this is even though she has been eating as many cookies, as fast as she bakes them?

Fried Noodles!!! Yipppeeee... we going on a crab high!! Ooops I mean carb! heheheh..Look, starvation times, no time for fancy recipes..just grab some greens, some meat, open a packet of egg noodles, tossed those whatchamacclit around a couple times in the wok on high heat and ... Add fish sauce, add kicap manis.. add salt.. and serve with sambal terasi (hot chili paste)..tada!!!! No fuss...very quick meal to prepare...prep time is approx ten minutes ad that was to peel those shells off the prawns...When you're done eating.... soon you will be on carb high and on your way to watching Korean drama all evening... BLISS!

Happy Chinese New Year!!

Yippee, even though I wasn't into Chinese New Year last week... this week I am raring to go... so I am busy baking goodies.. and one of them is an old favourite, a classic, the pineapple jam tart.

My pineapple tarts recipe is adapted from http://www.deliciousasianfood.com/2007/05/17/pineapple-tart-pastry/

The jam I had made from scratch, the recipe is also from the same site.

The pie was made from the second batch on Day 2 of baking, as I had wanted to use up all the jam.  I sprinkled cinnamon sugar on top of the pies.

 Cheese Heaven

The cheese is called Raclettes Cheese.

You heat it up and shaved off the melted cheese

Wow, concentrating hard on the cheese.....isn't this the coolest? You get to play with your dinner.

She said that the skin, when blistered, is THE best! Yummy, melted cheese looks so good!

Add melted cheese to your cooked potatoes.

There are charcuterie, gherkins and pickled onions accompany the raclette.

Yummo!

What a brave gal...don't look down now!!!

Ayam Panggang

Lucky I cooked this dish few days ago, today would have been too hot for barbequed chicken wings.

Ingredients:

400 gm of chicken wings
2 tablespoon of Indonesian kicap manis ( sweet soy sauce)
I table spoon of crushed garlic
2 teaspoon of chilli flakes ( Thai/ Malay/ Korean)

Method:
Cut the chicken wings to two.
Mixed in wet ingredients and add the chicken wings, leave in the fridge for two hours to marinade.
Barbeque chicken wings.

These would taste super awesome if it was done in the traditional way over hot charcoal. You get that smokey flavour. Remember, like the old school camp trips when you would BBQ chicken wings by the beach? Ah, good times!

Finger licking good...spicy too!

Flooding in Australia

You know, the mood here is sombre. In case, you are not aware, Australia has been in the world news for it's recent flooding in Queensland, Victoria and New South Wales. People have lost homes, pets and loved ones. The death toll is rising and many are still missing from the "inland tsunami".

I watched the news coverage the other night and I was shocked to see the extend of the damages. It is so surreal. My own personal experience of a flooding was back in Malaysia when I stood on the dining table; pointing and screaming out over a snake that swam past. It was nothing like on TV.

On the telly, it showed loose yachts slamming into bridges, a floating pontoon, a drifting restaurant who happened to be called Drift Cafe, I kid you not!!! Also heartbreaking stories of lives losts, happy endings of people reunited and found. And then there were the idiots and the low life scums that went around looting. I mean, seriously, how could you shitheads... when the Nation is hurting so much ....to stoop so low, as to loot other people's goods? And these same looters had to be rescued when they got into trouble themselves while escaping? As if the resources were not stretched enough? Personally I would have tasered them while they were in the water!

Anyway, that's just me, I am mean and inhumane :) I am glad that with all these horrible situations, the community have come together rallying and helping out each other and I really admire the humanity..okay, the ten arrested, not so much.. freggin muppets! Go check your dictionary, there is looting and then there is salvaging...big difference, you muppets!

I want give a shout out to everyone who donated to the appeal, to all on ground helping. I think you guys are great....except for those ten idiots arrested.. Well done Queensland Police ;)
Lastly, ...Pay it Forward!

Cookies and Cream Ice Cream

Recently, I purchased a Cuisinart ice cream maker and I have just made my first icecream using one. I read the instructions and left my bowl in a plastic bag ( to avoid freezer burns). I made cookies and cream ice cream with my son. He was happy to help and enjoyed eating his creation too. It was pretty good, I tell ya. Great buy this one! So glad that I waited for my Xmas present ;)

Ingredients:

1/2 (250ml) pint milk
1/2 pint (250ml) double/heavy cream
3oz (75g) sugar
5oz (125g) crushed oreo cookies

Method
Place the milk and sugar into a saucepan and heat gently, dissolving the sugar. Place the milk to one side to cool and when cold, stir in the cream. The other option is beat the milk and cream with sugar till blended then pour the complete mixture into an icecream maker and follow the manufacturer's instructions BUT remember to add the crushed cookies bits as the ice cream begins to thickened..
